Elevated Chicken Soup
Matt told me this was the BEST soup I’ve ever made, so this recipe deserves a permanent spot on the blog!! ☺️
Ingredients:
• 1 pound boneless, skinless chicken breasts
• Salt and pepper to taste
• 1 tablespoon olive oil
• 1 onion, finely chopped
• 3 cloves garlic, minced
• 8 oz cream cheese, softened
• 1 cup cooked and crumbled bacon (optional)
• 16 oz ground mild pork sausage
• 4 cups chicken broth
• 1 teaspoon dried dill
• 1/2 teaspoon onion powder
• 1/2 teaspoon garlic powder
• Green onions, chopped (for garnish)
Instructions:
1. Season chicken breasts with salt and pepper.
2. In a large pot, heat olive oil over medium-high heat. Add chicken and cook until browned on both sides. Remove chicken from the pot and set aside.
3. Repeat with the ground pork sausage.
4. In the same pot, add chopped onions and garlic. Sauté until softened.
5. Add chicken broth, cream cheese, bacon, dried dill, onion powder, and garlic powder. Stir until the cream cheese is fully melted.
6. Shred the cooked chicken and add it along with the ground sausage back to the pot.
7. Let all the goodness simmer for an additional 10-15 minutes until flavors meld.
8. Check seasoning and adjust if necessary.
9. Serve the Chicken Soup hot, garnished with chopped green onions.
